Is that your chick...pea pattie?

Another
semi - successful dinner

Chickpea Patties
from

(get the full recipe by clicking the link above)

Drain and rinse 2 cans of chickpeas
then smash with fork or food processor and set aside


 Shred a cucumber and let drain for 10 minutes
then mix together all ingredients for the sauce
1 cup Greek yogurt
cucumber
2 Tablespoons of scallions
1 Tablespoon of cilantro
salt


Toast the breadcrumbs
(I burnt the first batch)

 Mix all of the patties ingredients together:
Chickpeas
2 Teaspoons of garam masala 
2 eggs
1/2 cup toasted bread crumbs
1/2 cup of Greek yogurt
scallions
3 tablespoons of cilantro
salt
Make patties and fry in pan with 2 Tablespoons of olive oil


 voila!
(once again I hate my camera)


I loved the meal but need to try it again to perfect it 
they were a little dry to me
not sure if I made them too thick or not

Quick and Easy Meal

I am all about quick and easy meals.
Here's my latest favorite:

Cook kale with garlic

 chop up roasted red peppers
beat 6 eggs
layer red peppers
 kale
feta cheese
and pour eggs on top
bake for 25 ish minutes

Boom!

I also LOVED these recipes

Cheesy Cauliflower 
and Golden Brussels Sprouts

Christmas Exchange

This past weekend was Abbie's company holiday party

I was inspired to create a holiday treat to share
voila!
 


So this was supposed to be a post about the company party and the gift exchange
but I am so pissed that these GD pictures won't flip!
and it is all because of this stupid ass camera I have

Maybe Santa will read this post and buy me a new one for Christmas... or my birthday... or just because ...

on the chia bandwagon

thanks to Miss Fitnessistsa
I learned about chia seeds awhile ago
and have been adding them to my smoothies ever since.

But what I didn't know about 
was chia seed pudding

this S--- is great!

1/4 cup of Chia seeds
1 cup of almond milk
spoon of sugar
teaspoon of vanilla

I've also read recipes where people have added orange juice, kefir, syrup, bananas
you can really play with this

Put it in the fridge overnight
and you have a yummy healthy dessert!

Facon

I found a recipe 
to make fake bacon

To my surprise Publix already had some
I love every opportunity to be lazy so I picked some up.



Abbie tried a FLT
and I added mine to a salad
it was great- tasted just like bacon bits



the texture obviously is different but it did the trick
(for me anyway- not sure how Abbie feels about it)

I surprisingly have not missed bacon
the one thing that I thought I would miss the most

then again..
I haven't smelled real bacon in a long long time

can you pay my bills?

Last night Abbie and I celebrated 
a huge financial step for me.

Friday I paid off all of my credit cards.
well
sort of

I paid them off- with a consolidated zero percent interest loan.
I had been paying close to 20% interest in 2 of my credit cards.

Not having this cloud of doom hovering over me is the biggest relief.
For years and years I have ignored my enormous debt. Now thanks to Abbie's help
I should be completely debt free in about 7 months!

can I get a woot! woot!?

so how did we celebrate this feat?

By spending money of course.
(Abbie's money this time)

He treated me to dinner at PF Changs.

My mother bought me truffle salt this past week.

If you don't know what a truffle is
let me school you

we went into a truffle shop and tried truffle oils and salt
when we finally got the nerve to ask one of the employees what the heck a truffle was she said:
"um, it's like this magical wonderful thing"

stuff it

I'm having one of those days where I hate everyone and everything
I don't know why
I call it being poopie.

When I told Brittany I was poopie this weekend she thought I was having stomach issues
not the case

Basically I don't want to be anywhere or do anything
then feel guilty that I am feeling this way

Anyones else have this happen?

On the plus side
I made another loaded dinner last night

An Ashley Friday

How to have an Ashley Friday:

1- Melt 2tlbs- ish of butter

2- Add popcorn and swirl


3. Cover and shake time to time

4. When popping slows turn off the heat
5. Pour popcorn into bowl and add salt

6. Champagne - excuse me- sparkling wine is a perfect match for popcorn
(Ashley Rule- if champagne is on sale for less than $10 you buy it no matter what)
 

7. Beware of sneaky dogs trying to steal your goods

8. Put in a movie and enjoy the night
(or watch DVR'd shows)
