Tomorrow I head up to 
The Happiest Place on Earth!

I LOVE Disney World.
Love it.


When I was a kid my dad worked there for a bit and he would let my brother and I roam the park.
(awesome, right?)

I don't want to brag-
But I personally know both Mickey and Minnie Mouse

and thanks to my connections
I can usually get into the park at no charge
(ballin', right?)


I try to go to Disney at least once a year 
(more if I can get away with it)

but this will be the first time I will be able to RUN through it.

I. AM. PUMPED!

2:15 here I come!

Facon

I found a recipe 
to make fake bacon

To my surprise Publix already had some
I love every opportunity to be lazy so I picked some up.



Abbie tried a FLT
and I added mine to a salad
it was great- tasted just like bacon bits



the texture obviously is different but it did the trick
(for me anyway- not sure how Abbie feels about it)

I surprisingly have not missed bacon
the one thing that I thought I would miss the most

then again..
I haven't smelled real bacon in a long long time

Training to be a Princess

One more week to go before the Princess Half Marathon at Disney!

I haven't been training like I should
so yesterday I ran 12 miles
 just so I could be 100% confident that I can complete this race.

This was actually the first long run I've done without feeling like complete crap afterwards.
I even had time to hang out with my a fellow "princess in training".


I am concerned that I won't meet my time goal of 2:15 
(because I have yet to keep the pace in my long runs)
But I'm hopeful my adrenaline will kick in and get me closer to my goal.

BTW- I just want to say that a "runners high" is a complete myth. 

I've been trying to stay focused on completing this goal- but secretly I cannot WAIT to switch up my workout routine and work on non running activities.

can you pay my bills?

Last night Abbie and I celebrated 
a huge financial step for me.

Friday I paid off all of my credit cards.
well
sort of

I paid them off- with a consolidated zero percent interest loan.
I had been paying close to 20% interest in 2 of my credit cards.

Not having this cloud of doom hovering over me is the biggest relief.
For years and years I have ignored my enormous debt. Now thanks to Abbie's help
I should be completely debt free in about 7 months!

can I get a woot! woot!?

so how did we celebrate this feat?

By spending money of course.
(Abbie's money this time)

He treated me to dinner at PF Changs.

Super Bowl

Abbie and I don't exactly have the room
or the TV
to have a super bowl party

so I decided to just have a party for two and made a ton of appetizers:

Spinach and artichoke Dip

Spicy Black Bean Dip



Homemade Guacamole (and roasted garbanzo beans - not shown)


And since we are an ultra competitive couple we made bets on the game

leaving me with a 5 minute foot massage during half time



and 7 full days that I do not have to walk these guys:

Curry and Cupcakes

I've been dying to make strawberry cupcakes from scratch
so after work yesterday I found this recipe and went to work.

When the batter started to get really thick 
 I re-read the recipe
only to find that these are more like muffins than cupcakes.

oh well.
they still tasted pretty good.
I had the most fun decorating them.




I also used curry last night for the first time for dinner

Happy New Year!


They say that by Feb. 1st most people have already given up on their New Year's Resolutions.
To avoid that, I decided to be wickedly clever and make Feb. 1st my New Year instead.

Happy New Year Everyone!

Time to look back on last year's accomplishments
and make plans for 2011 domination.

Highlights from last year include:

Bucket List: Seattle

Bucket List: Rock (wall)climbing

Bucket List: visit Napa Valley

Bucket List: Go snow skiing


Ran my first 10K

Ran my 1st 1/2 marathon

Stopped eating anything with legs

Last year was an incredible year for me. I've never felt happier or healthier.  

While I still plan on maintaining my fitness and healthy eating habits- 
My 2011 goals are more on the spiritual/personal growth side.

Some of my 2011 goals include:
  • Adding and crossing more items off my bucket list.
  • Joining Toastmasters.
  • Getting more involved in my local Buddhist community.
  • Doing 3 random acts of kindness for friends, loved ones, coworkers and strangers a month.
  • Yoga, yoga and more yoga!  (time to get flexible)
  • Spend more time with friends and family.
  • Write more.
  • Blog more!
  • Meditate daily.
  • Give up coffee.
  • Go all out to celebrate every holiday. (Be sure to check out my Valentine's Day checklist)
  • Visit my far away friends.
  • Find an art project.
  • Let my dogs be dogs (this one is hard for me- can't let go of the leash!)
